Filled liquorice biscuits

Deliciously filled biscuits, similar to shortbread with a sweet liquorice and caramel filling!

Dough ingredients
240g flour
30g sugar
1/4 tsp sea salt
1 pinch of SALMIX® Salmiak powder "Sweet"
1 egg
120g cold butter

Filling ingredients
a handful of very finely chopped, soft salted liquorice
120g sugar
50g butter
75g whipped cream

Preparation
For the dough, mix the flour with the sugar, salt, SALMIX® Salmiak powder "Sweet" and egg. Add the softened butter piece by piece and knead well. Then shape the dough into a nice roll (approx. 4 cm in diameter), wrap in cling film and place in the fridge.

After a few hours, the butter in the dough will be firm again and you can cut approx. 3 cm thick biscuit slices from the roll. Place them on baking paper with a little space between them. Bake at 180° for about 10-12 minutes until golden brown and then leave to cool.

For the filling, caramelise the sugar in a pan until golden brown. Add the butter and cream and bring to the boil briefly, stirring constantly. Stir in the prepared pieces of liquorice and leave to cool.

Spread one half of the biscuits with the still soft filling and place a second biscuit on top as a lid.
